The north Indian state of Uttar Pradesh is well known for the variety of snacks that are traced back to this region.

Places like Varanasi and Lucknow are famous for ‘chaat’ items and an array of specialities which are influenced from the Mughals as well. One of the most popular items on the list is the sinfully fried snack Samosa! A spicy filling wrapped in dough and then fried crisp are the components of this popular fast food. It is served with green mint chutney or a red sweet one to add to the flavour.

Vegtable Samosa Recipe

Here is a Vegetable Samosa recipe for you to try:

INGREDIENTS

DOUGH
White refined flour – 1 Cup
Water to knead the dough
Cooking Oil – 1 Tbs
Salt to Taste
Carom Seeds – ¼ Tsp

FILLING
Boiled, peeled & mashed potatoes – 3-4
Boiled green peas -1/2 cup
Finely chopped green chillies -1-2
Crushed ginger- 1/2tsp
Finely chopped coriander – 1 tbsp
Chopped Cashews – few (optional)
Raisins – few (optional)
Garam masala( Mixed dry spices) -1/2tsp
Salt to Taste
Red chilli powder to taste
Dry Mango powder-1/2 tsp (optional)

PREPARATION

Making the dough is the first step. Mix all the ingredients (salt, oil, carom seeds) in the dough and knead into a soft pliable texture. Cover it with a muslin cloth and keep aside for 15 minutes.

Next start on the stuffing. Mix the mashed potatoes with all ingredients and knead well till they mix properly.

It is now time to combine the two. Roll the dough out to make thin slices and cut in small 4-5” diameter circles. Place a little mixture in the middle and softly fold like a dumpling. Heat some oil in a large pan and submerge the dumpling into the oil and fry until they are brown. Serve hot with mint or red chutney.
